Pumpkin Cake Mix Cupcakes

Preheat your oven to 350 degrees f.

Pumpkin cake mix cupcakes.

Blend cake mix pumpkin puree eggs water and oil in a large bowl at low speed until moistened. Pour batter into muffin cups evenly about 3 4 full. Divide the batter among the prepared muffin tins lined with paper liners and bake at 350 degrees until a toothpick inserted into the center of a cupcake comes out. Beat on medium speed for 2 minutes.

Mix together the cake mix sugar oil water eggs pumpkin puree pumpkin spice and cinnamon. Blend cake mix pumpkin eggs oil and water in large mixer bowl until moistened. Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions. Stir spice cake mix and pumpkin together until a thick batter emerges and the spice cake mix is completely mixed into the pumpkin.

Cool in pans on wire racks for 10 minutes. Place cupcake liners in 24 muffin cups or grease muffin cups. In large bowl beat cake mix pumpkin water oil eggs and pumpkin pie spice with electric mixer on low speed 30 seconds then on medium speed 2 minutes scraping bowl occasionally. Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean.

To make these pumpkin spice cupcakes combine the cake mix plus ingredients on back minus the water pumpkin pie spice and pumpkin puree. Prepare the cake mix as directed but with the following change. Stir for 2 minutes until the batter is super smooth. Increase speed to medium and beat for an additional 2 minutes.

Remove to wire racks to cool completely. Pour batter into prepared muffin cups filling 3 4 full. Pour the pumpkin cupcake batter into liners in muffin tins and bake for 17 20 minutes. Divide batter evenly among muffin cups about two thirds full.

Add vanilla and cinnamon and mix well.
